A Favorite Recipe!
Bean-Pot Beef Stew
This is wonderful for those chilly September evenings!
2 1/2 pounds of stewing beef
2 tablespoons vegetable oil
2 cups chopped onions
2 fat garlic cloves, chopped fine
1 cup red wine
3 large carrots, diced
1 cup diced raw potatoes
1 teaspoons dried savory
2 cups boiling water
3 tablespoons pearl tapioca
salt & pepper to taste
Heat half the oil in a heavy skillet and sauté the meat, a few pieces at a time, until brown on all sides. Remove to a bean pot or casserole. Add the remaining oil to the skillet and saute the onions for about 3 minutes, stirring, until lightly browned; then add the garlic and cook 1 minute more, being careful not to burn it. Scrape the contents of the skillet into the bean pot. Pour the wine into the skillet, bring to a boil, scraping up any browned bits, and pour that into the bean pot. Add the carrots, potatoes, savory, boiling water, and tapioca. Season very lightly with salt and pepper and cover the pot. Put it in a preheated 275-degree oven and cook for about 3 1/2 hours. Serves 4
